MOM'S CAULIFLOWER SOUP
•4 tbsp PURA olea organic extra virgin olive oil
•1/2 head of cauliflower
•1 medium potato
•1 red onion
•1 1/2 cup chicken broth
•Preheat oven to 400 F.
•Add the cauliflower, potato, onion, olive oil, salt and black pepper to a baking dish.
•Cover the baking dish with baking sheet and aluminum foil.
•Bake 30-35 minutes.
•Heat chicken broth in a pot.
•Add other ingredients.
•Blend with blender until smooth.
