What is Olive Oil?

The liquid fat, or natural oil, produced by pressing whole olives is known as olive oil. The fruit, which comes from a Mediterranean tree, has a distinct flavor that varies depending on where it is grown — mild, peppery, or even bitter. Processing practices provide olive oils of various 'grades,' either refined or unrefined. Unrefined oils are pure and unprocessed, which means they were extracted without heat or chemicals. This results in a pure oil with a more robust flavor. Refined oils have been processed to remove faults and are often lighter in color and gentler in flavor.

Extra virgin olive oil (EVOO) is an unprocessed oil prepared from the fruit's initial 'virgin' press. The extraction procedure uses no heat, conserving healthy plant chemicals known as polyphenols. You may expect to spend extra on EVOO because it is considered the best quality. It also has a stronger flavor and a darker appearance. Regular or light olive oils are often made up of refined and best cold-pressed olive oils.
