Earthy & Sweet: Kernza® Cinnamon Rolls for Your Weekend Kitchen

Posted on March 20, 2026

There is a specific kind of magic in what we call Hafta sonu mutfağı: the weekend kitchen. It is a space where time slows down, the frantic pace of the work week dissolves into the steam of a morning coffee, and the kitchen becomes the heart of the home. On these slow mornings, there is no greater joy than the ritual of baking. The rhythmic kneading of dough, the patient waiting for the rise, and the intoxicating aroma of cinnamon drifting through the hallway are acts of mindfulness in themselves.

But at Pura Gourmet Co., we believe that baking should be more than just an act of comfort; it should be an act of stewardship. This is why we are turning to Kernza® for our weekend indulgence. These Kernza® Cinnamon Rolls are not your average pastry. They are a bridge between tradition and a more sustainable future: a treat that tastes like the earth intended: nutty, deep, and utterly wholesome.

The Soul of the Grain: Why Kernza® Matters

When we talk about "conscientious" baking, we are looking at the story behind every ingredient. Kernza® is the first perennial grain to hit the commercial market, and it is a true revolutionary in the world of regenerative agriculture. Unlike annual wheat, which must be replanted every year, Kernza® stays in the ground year-round. Its roots can reach up to ten feet deep into the soil, creating a massive underground network that prevents erosion, sequesters carbon, and filters nitrate before it reaches our water systems.

Choosing Kernza® means you are participating in a cycle that restores soil health rather than depleting it. When you pull these rolls out of the oven, you aren't just feeding your family; you are supporting a movement toward a "living kitchen" that respects the planet.

Beyond its environmental credentials, Kernza® brings a distinct culinary personality to the table. It has a complex, toasty flavor profile with hints of graham cracker and spice. When blended with high-quality bread flour, it creates a texture that is slightly more substantial and "earthy" than a standard roll, offering a satisfying bite that feels both nourishing and indulgent.

The Living Kitchen: Creating the Atmosphere

Before we dive into the flour and yeast, let us set the scene. A "living kitchen" is one that feels warm and inhabited. To get the best results from this recipe, embrace the rustic nature of the process. Clear off your wooden countertop, light a candle with notes of cedar or vanilla, and don't worry about perfect symmetry. These rolls are meant to look artisanal and homemade: with gooey centers and edges that have caramelized into a deep, golden brown.

For a bright, modern twist on the classic cinnamon roll, we recommend adding a touch of lemon zest to your glaze. The acidity cuts through the richness of the butter and highlights the more delicate floral notes of the Kernza® flour.

The Recipe: Earthy Kernza® Cinnamon Rolls

To ensure these rolls remain light and fluffy while still showcasing the grain, we use a blend of approximately 40–50% Kernza® flour and 50–60% bread flour. This balance allows the gluten structure to develop beautifully for that soft, pull-apart texture—while still letting Kernza® bring its nutty, toasty warmth to the weekend kitchen.

The Ingredients

For the Dough:

  • 1 cup warm whole milk (around 110°F)
  • 1 tablespoon instant dry yeast
  • 2 tablespoons raw cane sugar
  • 1 teaspoon fine sea salt
  • 3 tablespoons unsalted butter, softened
  • 1 large pasture-raised egg, room temperature
  • 1 ½ cups Kernza® flour
  • 1 ¾ cups organic bread flour (plus a little extra for dusting)

For the Filling:

  • ½ cup unsalted butter, very soft
  • 1 cup dark brown sugar (packed)
  • 2 tablespoons ground Ceylon cinnamon
  • A pinch of nutmeg for depth

For the Zesty Cream Cheese Glaze:

  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup organic powdered sugar
  • 1 teaspoon pure vanilla bean paste
  • 1 teaspoon freshly grated lemon zest
  • 1–2 tablespoons milk (to reach your desired consistency)

The Method

1. Prepare the Foundation

In the bowl of a stand mixer, combine the warm milk, yeast, and cane sugar. Let it sit for about 5 minutes until it becomes slightly frothy. This "bloom" is the sign that your yeast is alive and ready to lift your dough. Add the salt, softened butter, and the egg. Whisk gently until the egg is incorporated.

2. Mix and Knead

Add the Kernza® flour and the bread flour to the bowl. Using the dough hook attachment, mix on low speed until a shaggy dough forms. Increase to medium speed and knead for about 5–7 minutes. Because Kernza® has different gluten properties than standard wheat, the dough may feel slightly more delicate. If it remains too sticky, add bread flour one tablespoon at a time until the dough pulls away from the sides of the bowl but still feels tacky to the touch.

3. The First Rise

Transfer the dough to a lightly oiled glass bowl. Cover it with a damp linen cloth and place it in a warm, draft-free spot. Let the dough rise until it has doubled in size: usually between 60 to 90 minutes. This is the perfect time to step away, enjoy a cup of tea, and appreciate the slow pace of the morning.

4. Shape and Fill

Once doubled, gently punch down the dough to release the air. On a lightly floured surface, roll the dough into a large rectangle, approximately 12x18 inches. Spread the softened butter across the entire surface, leaving a small border at the top. In a small bowl, mix the brown sugar, cinnamon, and nutmeg, then sprinkle it generously over the butter.

Starting from the long edge closest to you, roll the dough into a tight log. Using a sharp serrated knife or a piece of unflavored dental floss, cut the log into 12 even slices.

5. The Second Rise

Place the rolls into a greased 9x13 inch ceramic baking dish. Leave a little space between them so they have room to expand. Cover again and let them rise for another 45 minutes. They should look puffy and be touching each other by the end of this stage.

6. Bake to Golden Perfection

Preheat your oven to 350°F (175°C). Place the rolls in the center rack and bake for 20–25 minutes. You are looking for a deep amber color on top. The smell of the toasted Kernza® grain mixing with the cinnamon sugar will transform your kitchen into a sanctuary of warmth.

7. The Finishing Touch

While the rolls are cooling slightly, whisk together the cream cheese, butter, powdered sugar, vanilla, and lemon zest. Add milk a teaspoon at a time until you have a thick but pourable glaze. Generously spread the glaze over the rolls while they are still warm. This allows some of the icing to melt into the spirals, creating that iconic gooey center.

Pro Tips for the Perfect Kernza® Bake

  • Don't Over-Flour: Kernza® absorbs moisture differently than white flour. It is better to have a dough that is slightly sticky than one that is too dry. A dry dough will result in a dense, bread-like roll rather than a soft pastry.
  • The Texture: Expect a more "cake-like" and rustic crumb. Kernza® doesn't produce the same long, elastic gluten strands as 100% bread flour, which gives these rolls a unique, tender bite that feels more substantial.
  • Storage: These are best served warm from the oven. However, if you have leftovers, store them in an airtight container. A quick 10-second zap in the microwave will revive that "fresh-baked" softness the next day.

A Thoughtful Way to Start the Day

Baking with Kernza® is an invitation to be present. It is a reminder that the choices we make in our "weekend kitchen" resonate far beyond our own dinner tables. By choosing ingredients that support regenerative agriculture, we are participating in a larger story of healing and hope.

As you sit down with a warm roll, watch the glaze melt over the earthy, golden spirals. Take a moment to appreciate the depth of flavor: the nuttiness of the grain, the warmth of the cinnamon, and the bright spark of lemon. This is more than just a recipe; it is a celebration of mindful living and the simple, profound beauty of a slow weekend morning.

In every bite of a Kernza® cinnamon roll, there is a connection to the deep roots of the earth and the thoughtful hands that brought it to your kitchen. Enjoy the sweetness of the moment, knowing it was made with intention.
