Stuffed Zucchini Recipe

6 medium zucchini
2/3 lbs ground beef
½ cup uncooked rice
7 tablespoons PURA Olea Organic Premium Extra Virgin Olive Oil
2 yellow onions, chopped
2 cloves of garlic, chopped1
1 tomato, sliced
1 tablespoon tomato paste
1 tablespoon pepper paste 1 cup finely chopped parsley 1 cup finely chopped fresh dill
Spices:
• 1 teaspoon salt
• 1 teaspoon red pepper
• 1 teaspoon cumin
• 1 teaspoon black pepper
Finely chop the onions, garlic, dill and parsley and place them in a large bowl.
Add the ground beef, pepper and tomato pastes, rice, spices and 4 tablespoons of* PURA Olea Organic Premium Extra Virgin Olive Oil to the same bowl and mix all the ingredients.
Peel the zucchini, cut them in half, and carve out the middle of each one, leaving a sort of shell that’s still closed on the bottom.
Fill the mixture you prepared into the zucchini.
Cover the openings of the zucchini with tomato slices and arrange them in a pot.
Add ½ quart of boiling water and 3 tablespoons of PURA Olea Organic Premium Extra Virgin Olive Oil. Cook for 45 minutes on low heat.
