  • 1/2 cup room temperature water (give or take a tablespoon)

Instructions:

  1. Whisk Together: In a large bowl, whisk together the Kernza® flour, mixed seeds, and sea salt. Ensure the seeds are evenly distributed so every bite has that signature crunch.
  2. Hydrate: Create a well in the center and pour in the Pura Olea EVOO and the water.
  3. Mix Gently: Using a spatula or your hands, gradually mix the ingredients until a shaggy dough forms. Kernza® flour behaves a bit differently than white flour; it’s thirstier and less elastic, so don't be alarmed if it feels a little "rustic." If the dough is too crumbly to hold together, add water one teaspoon at a time.
  4. Rest: Let the dough sit for about 5 minutes. This allows the chia and flax seeds to absorb some moisture, making the dough easier to roll out.
  5. Roll it Out: Preheat your oven to 350°F (175°C). Place the dough between two sheets of parchment paper. This is the "pro tip" for zero-waste cleanup! Roll the dough as thin as you possibly can: aim for about 1/8th of an inch. The thinner the dough, the better the snap.
  6. Score and Season: Remove the top layer of parchment. Using a pizza cutter or a sharp knife, score the dough into rectangles or diamonds. Sprinkle a little extra sea salt on top and lightly press it in.
  7. Bake: Slide the parchment onto a baking sheet. Bake for 15–20 minutes, or until the edges are golden brown and the center feels firm.
  8. Cool: Let them cool completely on the pan. They will continue to crisp up as they reach room temperature.
