•2 tbsp PURA olea organic extra virgin olive oil
•1/4 cup of walnuts
•1/3 cup of Italian parsley
•1/3 cup of feta
•1/2 tsp sugar
•Cut the lower part of the leek into strips.
•Blanche in the boiling water for 5 minutes, then drain.
•Mix feta, parsley, walnuts and olive oil.
•Place the leek strips. Place a teaspoon of the feta mix towards the bottom of each strip and fold upwards into a triangular shape.
•Fry the wrapped leeks with olive oil.
•As sauce, cook tomato paste, black pepper, sugar and thyme.
