Kernza® Chocolate Chip Banana Bread

There’s something deeply comforting about banana bread fresh from the oven. The aroma of ripe bananas, warm vanilla, and melted chocolate instantly makes a kitchen feel like home. In this version, we use Kernza® flour for its rich, nutty character and nourishing qualities, bringing depth and balance to a timeless favorite.
This loaf is easy to make, beautifully moist, and perfect for slow mornings, afternoon coffee breaks, or sharing with loved ones.
Ingredients

2 cups Kernza® flour

1 ½ tsp baking powder

½ tsp baking soda

1 tsp salt

½ cup sugar

1 egg

½ cup milk

¼ cup vegetable oil

1 tsp vanilla extract

4 ripe bananas, mashed

Optional: chocolate chips (to taste)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
- In a large bowl, combine all the dry ingredients, Kernza® flour, baking powder, baking soda, salt, and sugar. Mix gently to evenly distribute.
- Create a well in the center of the dry mixture and add the egg, milk, vegetable oil, and vanilla extract. Add the mashed bananas and stir until just combined. Take care not to overmix; a gentle hand keeps the loaf tender.
- Fold in chocolate chips if using. Pour the batter into the prepared pan and smooth the top.
- Bake for about 50 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaf to cool slightly before slicing.
To Serve
