The Magic of Kernza®: A Grain with Deep Roots

If you haven’t heard of Kernza® yet, prepare to fall in love. Kernza® is the trademark name for the grain of a perennial intermediate wheatgrass. Unlike traditional annual wheat, which must be replanted every year, Kernza® stays in the ground year after year.

Why does this matter? Because of its roots. While typical wheat roots only reach a few inches into the soil, Kernza® roots can grow up to ten feet deep! These massive root systems do incredible things for our planet:

Because it’s a bit different from modern wheat, we find that a blend of Kernza® flour and high-quality bread flour offers the best of both worlds: the structural integrity of a classic focaccia with the complex, wholesome depth of this ancient grain.

A Quick Note on Olive Oil (So Kernza® Can Shine)

Focaccia is simple, so ingredient quality really shows. Use a good organic extra virgin olive oil if you have it—its fresh, peppery finish plays so nicely with Kernza®’s naturally nutty, toasted flavor. (And yes, using organic is also a small, thoughtful way to support cleaner farming practices.)

The Recipe: Planet-Friendly Kernza® Focaccia

This recipe is designed to be approachable, even if you’re new to baking with perennial grains. We’ve aimed for a 30% Kernza® blend so you get that wholesome, nutty character while keeping the focaccia light and springy.

Kernza® Focaccia Ingredients
• 3¼ cups bread flour
• ¾ cup Kernza® flour
• 1½ cups + 1 tbsp water
• 1½ tsp instant yeast
• 2 tsp salt
• 2 tbsp organic extra virgin olive oil

Topping:
• 2–3 tbsp organic extra virgin olive oil
• flaky salt
• rosemary (optional)

Instructions

  1. Mix water, flours, and yeast until combined. Rest 20 min.
  2. Add salt and olive oil. Mix until smooth (2–3 min).
  3. Cover and rise 2–2.5 hours. Every 30 min, stretch and fold the dough.
  4. Transfer to well-oiled 10×15 pan. Rest 20 min, gently stretch.
  5. Rise 45–60 min until puffy.
  6. Dimple dough with fingers. Add olive oil and toppings.
  7. Bake at 445°F for 20–25 min until golden.

Optional (But Delicious): A Simple Olive Oil Dip

Kernza® focaccia is honestly satisfying on its own—but if you want a quick dip to go with it, this one takes a couple minutes and stays out of the way so the Kernza® flavor is still the star.

Simple Olive Oil Dip

  • 1/3 cup extra virgin olive oil
  • 1 small clove garlic, finely grated (optional)
  • 1/2 teaspoon dried oregano (or Italian seasoning)
  • Pinch of red pepper flakes (optional)
  • Sea salt + cracked black pepper, to taste
  • A small squeeze of lemon (optional, for brightness)

Method: Whisk everything together in a small bowl and let it sit 5 minutes so the flavors infuse.
